Dried Tart Cherry-Walnut Scones (Dried Cherries)

  • 2 cups all-purpose flour
  • ¼ tsp. baking soda
  • 1 Tbs. baking powder
  • 1/3 cup sugar
  • 2 Tbs. unsalted butter
  • 1/3 cup dried tart cherries
  • 1 Tbs. vanilla extract
  • 1 cup nonfat buttermilk
  • vegetable cooking spray
  • 3 Tbs. chopped walnuts

Pre-heat oven to 400F. Combine flour, baking powder, baking soda, and sugar in a medium bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Stir in dried cherries and walnuts. Add buttermilk and vanilla, stirring with a fork until dry ingredients are moistened. Spoon 2 heaping tablespoonfuls of dough, 2 inches apart, onto baking sheets coated with cooking spray. Bake at 400F for 15 to 17 minutes or until golden. Makes 12 scones.
